Ingredients
- ¼ cups - Olive Oil
- ¼ cups - Red Wine Vinegar
- 2 cloves - Garlic
- ¾ tsp - Salt
- ⅛ tsp - Pepper
- 1 can - Black Beans
- 1 can - Black-Eyed Peas
- 1 can - Sweet Corn
- ¾ cups - Red Onion
- ½ cups - Tomato
- ⅔ cups - Cilantro
- 1 tsp - Ground cumin
- 2 - Avocados
Instructions
- In a small bowl, combine olive oil, red wine vinegar, garlic, salt, pepper, and cumin.
- Shake or whisk well and set aside.
- In a large bowl, combine black beans, black-eyed peas, sweet corn, red onion, tomato, and cilantro.
- Pour dressing on bean mixture and stir well.
- Just before serving, add the chopped avocados.
- For best taste, refrigerate for at least an hour.
