Ingredients

  • ⅓ cup - raw bacon
  • 2 - Chicken breasts
  • 1 tbsp - Ranch seasoning
  • ¼ tsp - Salt
  • ¼ tsp - Pepper
  • 1 - onion
  • 2 stalks - Celery
  • 2 - carrots
  • 2 teaspoons - garlic
  • 6 cups - Chicken broth
  • 4 ounces - Cream cheese
  • ½ cup - Heavy whipping cream

Instructions

  1. In a skillet on the stove, cook the bacon until crisp, about 3-4 minutes. When cooked, remove to a paper towel lined plate to drain excess grease.
  2. In the remaining hot bacon grease in the skillet, cook the vegetables until onions are translucent (about 3 minutes). Add the garlic and continue to cook for 1 more minute.
  3. Season the chicken with half of the ranch seasoning, salt and pepper.
  4. Add the chicken broth, bacon, veggies and seasoned chicken breasts to a crock pot.
  5. Cook on low for 4-6 hours, or until the chicken is done. Remove chicken to a plate to shred.
  6. Add shredded chicken back to the crock pot with the heavy whipping cream and cream cheese. Let cook until the cream cheese has melted and sauce is thick and creamy.
