Ingredients

  • 1 - baguette
  • olive oil
  • 4 ounces - goat cheese
  • 4 ounces - cream cheese
  • 1 tbsp - orange juice
  • 1 cup - cranberry and orange sauce
  • fresh mint
  • orange zest

Instructions

  1. Preheat oven to 350 degrees F.
  2. Slice baguette into ½-inch to ¾-inch slices. You need 18 slices.
  3. Arrange baguette slices on a baking sheet and drizzle lightly with olive oil. Bake for 8 minutes, flip and bake for another 7 minutes, until golden and crisp. Let cool slightly.
  4. Meanwhile, make the goat cheese spread. In a medium bowl, combine goat cheese, softened cream cheese and 1 tablespoon orange juice. Mix until smooth and creamy.
  5. Assemble the crostini by spreading a heaping spoonful of the goat cheese mixture onto each toasted baguette slice.
  6. Spoon a small amount of Cranberry and Orange Sauce on top of the cheese layer. Garnish with chopped fresh mint and zest orange over each.
  7. Transfer to a platter and serve immediately.
