Ingredients
- 1 - baguette
- olive oil
- 4 ounces - goat cheese
- 4 ounces - cream cheese
- 1 tbsp - orange juice
- 1 cup - cranberry and orange sauce
- fresh mint
- orange zest
Instructions
- Preheat oven to 350 degrees F.
- Slice baguette into ½-inch to ¾-inch slices. You need 18 slices.
- Arrange baguette slices on a baking sheet and drizzle lightly with olive oil. Bake for 8 minutes, flip and bake for another 7 minutes, until golden and crisp. Let cool slightly.
- Meanwhile, make the goat cheese spread. In a medium bowl, combine goat cheese, softened cream cheese and 1 tablespoon orange juice. Mix until smooth and creamy.
- Assemble the crostini by spreading a heaping spoonful of the goat cheese mixture onto each toasted baguette slice.
- Spoon a small amount of Cranberry and Orange Sauce on top of the cheese layer. Garnish with chopped fresh mint and zest orange over each.
- Transfer to a platter and serve immediately.
