Instructions
1
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Combine flour, baking powder and salt in a mixing bowl and stir together. In the bowl of an electric mixer fitted with the paddle attachment, beat together sugar, butter, eggs, vanilla and orange zest until combined. With the mixer on low, slowly add dry ingredients and mix until just incorporated being careful not to over mix. Stir in white chocolate and dried cranberries.
2
Divide dough in half. Form one half into a 12″x3″ log on the prepared baking sheet. Repeat with remaining half of dough. Place logs parallel and spaced apart on baking sheet. Bake for 30 minutes, or until logs are golden brown. Remove from oven and cool for 25 minutes. Maintain oven temperature.
3
Carefully transfer cooled logs to a cutting board. Using a serrated knife, cut logs into 1/2 inch slices on the diagonal. Lie the slices on one cut side on a baking sheet. Return to the oven and bake for 12 minutes. Transfer to a wire rack and cool completely.

Tips & Tricks (5)
- Toast Your Orange Zest 🍊Lightly toast the orange zest in a dry pan for 30 seconds before adding to the dough to intensify the citrus flavor and reduce moisture content for crispier biscotti.
- Chill Dough Before Slicing ❄️Refrigerate the baked log for at least 30 minutes before slicing diagonally; this prevents crumbling and creates clean, uniform pieces for even second baking.
- Lower Second Bake Temperature 🔥Reduce oven temperature to 300°F for the second bake to dry out the biscotti without browning the white chocolate chips, which can scorch and turn bitter.
- Prevent Cranberry Sinking 🫐Toss dried cranberries lightly in flour before folding into the dough to distribute them evenly throughout and prevent them from sinking to the bottom.
- Brush with Egg Wash First 🥚Apply a thin egg wash to the log before the first bake to create a beautiful golden exterior and help bind the ingredients for better structural integrity during slicing.
