Ingredients

  • 4 - eggs
  • ½ cup - olive oil
  • 1 tbsp - orange zest
  • ⅓ cup - orange juice
  • ⅓ cup - maple syrup
  • 2 cups - almond flour
  • 1 tsp - baking powder
  • ½ tsp - baking soda
  • a pinch of salt
  • 1 cup - fresh cranberries

Instructions

  1. Preheat the oven to 350 degrees and line a standard size muffin pan with paper liners.
  2. In a large bowl, whisk together the eggs, oil, orange zest and juice, and maple syrup until combined.
  3. Add the almond flour, baking powder, baking soda and salt, and whisk until well incorporated and no lumps remain.
  4. Gently fold in the cranberries.
  5. Divide the batter evenly between the (12) muffin cups and bake for 15-20 minutes until lightly golden brown and set.
  6. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and cool completely. Enjoy!
