Ingredients
- ½ lb - pasta
- 2 tablespoons - olive oil
- 1 - chicken breast
- Salt
- Black pepper
- ½ tsp - garlic powder
- ½ tsp - onion powder
- ½ tsp - paprika
- ½ lb - Italian sausage
- 3 ounces - soppressata
- 3 tablespoons - unsalted butter
- 2 cloves - garlic
- 4 ounces - sweet roasted red peppers
- 1 ½ cups - heavy cream
- ¾ cup - grated parmesan cheese
- ½ cup - shredded mozzarella cheese
- Reserved pasta water
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
- Heat 2 tbsp olive oil in a skillet over medium heat. Season diced chicken with salt, pepper, paprika, garlic powder, and onion powder.
- Cook chicken until golden and cooked through. Remove from the pan and set aside.
- In the same skillet, cook the Italian sausage until browned and cooked through. Remove and set aside.
- Add soppressata to the skillet and cook until crispy. Remove and set aside.
- In the same pan, melt butter and add garlic. Sauté until fragrant, then add roasted red peppers. Cook for 2–3 minutes.
- Pour in heavy cream and bring to a gentle simmer. Season with the same spice mix used earlier.
- Stir in cooked pasta, a splash of reserved pasta water, Parmesan, and mozzarella. Mix until cheese is melted and sauce is creamy.
- Return cooked chicken, sausage, and soppressata to the pan. Toss to combine. Add more pasta water if needed to adjust the consistency.
- Top with extra Parmesan and serve hot.
