1/4
Creamy Chicken Fettuccine Alfredo
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and then drain.
2
Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, basil, and paprika.
3
Heat olive oil in a pan over medium heat. Add chicken and cook, covered, until golden and cooked through (about 6–7 minutes per side). Remove from pan and set aside.
4
In the same pan, add butter. Once melted, add minced garlic and sauté for 1–2 minutes until fragrant.
5
Pour in the heavy cream and bring to a gentle simmer. Re-season with garlic powder, onion powder, basil, paprika, salt, and pepper.
6
Add cooked pasta, cream cheese, and Parmesan cheese. Stir well to combine.
7
Add reserved pasta water a little at a time, stirring until sauce is silky and coats the pasta.
8
Slice cooked chicken and place on top of the pasta. Garnish with chopped parsley and extra Parmesan. Serve immediately.

Tips & Tricks (5)
- Master the Sauce Temperature 🌡️Keep your Alfredo sauce on low heat after adding cream cheese and Parmesan to prevent it from breaking or becoming grainy—the residual heat will melt everything smoothly without curdling.
- Use Pasta Water as Liquid Gold 💧Reserve starchy pasta water before draining and gradually add it to your Alfredo sauce to achieve the perfect silky consistency while helping the sauce cling beautifully to the fettuccine.
- Pound Chicken for Even Cooking 🔨Gently pound chicken breasts to ½-inch thickness to ensure they cook evenly in 6-7 minutes, preventing dry edges while the center catches up.
- Bloom Your Garlic in Butter First 🧈Toast minced garlic in melted butter for 30-45 seconds before adding cream to build a deep, aromatic foundation that prevents the raw garlic bite from overpowering your sauce.
- Finish with Room-Temperature Parmesan 🧀Add grated Parmesan off the heat in small handfuls while tossing constantly to incorporate it smoothly and maintain its delicate texture instead of creating clumps.
