  • 1 pound - gnocchi
  • 3 tablespoon - unsalted butter
  • 2 cloves - garlic
  • ¼ cup - white wine
  • 1 ¼ cup - heavy cream
  • 1 teaspoon - saffron threads
  • ½ cup - Parmesan cheese
  •   - Salt
  •   - Black pepper
  • ¼ cup - reserved pasta water

  1. Bring a large pot of salted water to a boil and cook gnocchi according to package instructions. Reserve 1/4 cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt the butter and sauté minced garlic until fragrant, about 1 minute.
  3. Pour in the white wine to deglaze the pan. Let it simmer for 2–3 minutes to cook off the alcohol.
  4. Add 1 cup of heavy cream, saffron threads, salt, pepper, and a pinch of garlic powder if desired. Bring to a light simmer.
  5. Stir in the cooked gnocchi, reserved pasta water, 1/2 cup of Parmesan, and remaining 1/4 cup of cream. Mix until sauce is smooth and well combined.
  6. Serve warm, topped with additional Parmesan and freshly cracked black pepper.
