Creamy Saffron Gnocchi
Instructions

Bring a large pot of salted water to a boil and cook gnocchi according to package instructions. Reserve 1/4 cup of pasta water, then drain.

In a large skillet over medium heat, melt the butter and sauté minced garlic until fragrant, about 1 minute.

Pour in the white wine to deglaze the pan. Let it simmer for 2–3 minutes to cook off the alcohol.

Add 1 cup of heavy cream, saffron threads, salt, pepper, and a pinch of garlic powder if desired. Bring to a light simmer.

Stir in the cooked gnocchi, reserved pasta water, 1/2 cup of Parmesan, and remaining 1/4 cup of cream. Mix until sauce is smooth and well combined.

Serve warm, topped with additional Parmesan and freshly cracked black pepper.
