  • ½ pound - pasta
  • 2 tablespoon - unsalted butter
  • 1 tablespoon - olive oil
  • ½  - yellow onion
  • 3 cloves - garlic
  •   - Salt
  • 8 ounce - ground Italian sausage
  • ½ teaspoon - black pepper
  • ½ teaspoon - garlic powder
  • ½ teaspoon - onion powder
  • ½ teaspoon - paprika
  • ½ teaspoon - dried basil
  • 3 tablespoon - tomato paste
  • 1 ½ cup - heavy cream
  • ¼ cup - Parmesan cheese
  • ½ cup - Asiago cheese
  • ½ cup - mozzarella cheese
  • ¼ cup - reserved pasta water
  •  Handful - fresh basil
  • 1 ball - burrata cheese
  •   - Extra Parmesan

  1. Cook pasta in salted water until al dente. Reserve 1/4 cup pasta water and drain.
  2. In a large skillet, melt butter with olive oil over medium heat. Add diced onion and garlic, season with salt, and sauté until softened.
  3. Add ground sausage and cook until browned. Season with pepper, garlic powder, onion powder, paprika, and dried basil.
  4. Stir in tomato paste and mix well to coat the sausage.
  5. Pour in 1 cup of heavy cream and bring to a simmer. Add the remaining 1/2 cup cream and re-season to taste.
  6. Add Parmesan, Asiago, and mozzarella cheese. Stir until melted.
  7. Mix in reserved pasta water and cooked pasta. Stir until everything is well coated and creamy.
  8. Fold in fresh basil and serve topped with a ball of burrata and extra Parmesan cheese.
