Tips & Tricks (5)
- Brown Sausage Properly for Depth 🍖Don't break apart the sausage immediately—let it sear undisturbed for 3-4 minutes to develop a golden crust that builds rich, caramelized flavor before crumbling.
- Bloom Tomato Paste in Fat 🍅After removing sausage, cook tomato paste in the rendered fat and butter for 1-2 minutes to intensify its umami depth before adding cream—this is a professional technique that transforms the sauce.
- Use Pasta Water as Your Thickener 💧Reserve starchy pasta water and add it gradually instead of simmering the sauce endlessly; it naturally emulsifies the cream and helps the sauce cling to pasta while preventing it from breaking.
- Add Burrata at the Last Second ❄️Place cold burrata on warm (not hot) pasta just before serving so it melts slightly and creates creamy pockets without separating or becoming grainy from excessive heat.
- Layer Your Cheeses Strategically 🧀Mix shredded mozzarella and Asiago into the hot sauce for melting body, add grated Parmesan at the end for sharp bite, and top with burrata fresh to maintain distinct cheese flavors and textures.
