Ingredients
- ½ lb - pasta
- 2 tablespoons - unsalted butter
- 1 tbsp - olive oil
- ½ - onion
- 3 cloves - garlic
- Salt
- Black pepper
- 8 ounces - ground Italian sausage
- ½ tsp - garlic powder
- ½ tsp - onion powder
- ½ tsp - paprika
- 1 tsp - dried basil
- 3 tablespoons - tomato paste
- 1 ½ cups - heavy cream
- ¼ cup - grated Parmesan cheese
- ½ cup - shredded Asiago cheese
- ½ cup - shredded mozzarella cheese
- ¼ cup - reserved pasta water
- handful - fresh basil leaves
- 1 - burrata cheese
- Extra Parmesan
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain the rest.
- In a large skillet, heat butter and olive oil over medium heat. Add diced onion and cook for 2–3 minutes.
- Stir in minced garlic and a pinch of salt. Cook until fragrant.
- Add Italian sausage and break it apart with a spoon. Season with salt, pepper, garlic powder, onion powder, paprika, and dried basil. Cook until browned.
- Add tomato paste and stir to coat the sausage evenly.
- Pour in 1 cup of heavy cream and bring to a gentle simmer. Then add remaining 1/2 cup of heavy cream.
- Season again to taste with the same spices. Stir in Parmesan, Asiago, and mozzarella until melted.
- Add cooked pasta and reserved pasta water. Toss everything together until creamy and well coated.
- Fold in fresh basil and remove from heat.
- Plate and top each serving with burrata and extra Parmesan cheese. Serve immediately.
