  • 1 pound - gnocchi
  • 3 tablespoon - olive oil
  • 1 pint - cherry tomatoes
  •   - Salt
  •   - Black pepper
  • 2 tablespoon - tomato paste
  • 1 cup - heavy cream
  • ½ teaspoon - garlic powder
  • ½ teaspoon - onion powder
  • ½ teaspoon - dried parsley
  • ½ cup - Parmesan cheese
  • ¼ cup - reserved pasta water
  •  Handful - fresh basil
  • 1 ball - burrata cheese

  1. Cook gnocchi in salted boiling water until they float. Reserve 1/4 cup pasta water and drain.
  2. In a skillet, heat olive oil over medium heat. Add cherry tomatoes, season with salt and pepper, and cook for 5–10 minutes until soft.
  3. Squish most of the tomatoes with the back of a spoon, leaving a few intact. Stir in tomato paste and cook for 2–3 minutes.
  4. Add heavy cream and mix well. Season with garlic powder, onion powder, parsley, salt, and pepper.
  5. Add cooked gnocchi and a splash of pasta water. Stir to combine and let cook for 5 minutes.
  6. Add Parmesan and fresh basil. Stir until creamy. Add more pasta water if needed for consistency.
  7. Top with burrata and extra Parmesan and basil before serving.
