Cut the ciabatta in half lengthwise, then halve each half. Brush the cut sides with olive oil. Place in the oven at 200°C (top heat only) for about 10 minutes, until the inside is crispy.

Drizzle the sliced chicken breast with olive oil and rub with salt, pepper, paprika, and garlic powder.

Coat each fillet in flour → egg → seasoned panko, pressing well.

Heat oil in a pan and fry each fillet until golden and crispy (about 3–4 minutes per side). Let drain on paper towels.

Mix mayonnaise, mustard, Worcestershire sauce, lemon juice, Parmesan, salt, and pepper until smooth.

Mix half of the sauce with chopped romaine lettuce.

Spread the remaining sauce on both sides of the toasted ciabatta. Layer with the sauced lettuce, crispy chicken, and a generous amount of Parmesan. Close the sandwich and serve immediately.
