Ingredients
- 1 - chicken breast
- olive oil
- spice mix
- ⅓ cup - flour
- 1 - egg
- ¾ cup - panko breadcrumbs
- ⅓ cup - mayonnaise
- 2 tablespoons - mustard
- 1 dash - worcestershire sauce
- 1 tsp - lemon juice
- 2 tablespoons - Parmesan
- salt & pepper
- 1 - ciabatta bread
- romaine lettuce
Instructions
- Cut the ciabatta in half lengthwise, then halve each half. Brush the cut sides with olive oil. Place in the oven at 200°C (top heat only) for about 10 minutes, until the inside is crispy.
- Drizzle the sliced chicken breast with olive oil and rub with salt, pepper, paprika, and garlic powder.
- Coat each fillet in flour → egg → seasoned panko, pressing well.
- Heat oil in a pan and fry each fillet until golden and crispy (about 3–4 minutes per side). Let drain on paper towels.
- Mix mayonnaise, mustard, Worcestershire sauce, lemon juice, Parmesan, salt, and pepper until smooth.
- Mix half of the sauce with chopped romaine lettuce.
- Spread the remaining sauce on both sides of the toasted ciabatta. Layer with the sauced lettuce, crispy chicken, and a generous amount of Parmesan. Close the sandwich and serve immediately.
