Preheat oven to 200°C (top and bottom heat), prepare baking tray.

Wash the zucchini and cut it into slices about half a centimeter thick. Crack the egg into a shallow bowl and whisk it. Mix the breadcrumbs, Parmesan cheese, salt, garlic powder, and some freshly ground pepper in a second bowl. Place the flour in a third bowl or a shallow bowl.

First, coat the zucchini slices in flour so they are lightly dusted on both sides, then dip them in egg on both sides, and finally roll them in the Parmesan mixture. Place the breaded zucchini slices on the prepared baking sheet and repeat for the rest. Set the remaining Parmesan mixture aside.

Place the zucchini chips in the oven and bake for 15 minutes at 200°C (390°F). Then carefully turn the chips over. Sprinkle the remaining panko-parmesan mixture over the baking sheet and bake for another 5 to 7 minutes, or until the zucchini slices are golden brown and crispy all over. Serve the zucchini chips hot.
