
Crispy Potato Croquettes

Ingredients
- 3 - potatoes
- 1 tsp - salt
- ½ tsp - black pepper
- 1 tsp - garlic powder
- ½ tsp - turmeric
- 1 tsp - curry powder
- ½ tsp - paprika
- ½ tsp - ground cumin
- 1 tsp - MSG
- 1 - egg
- 2 tablespoons - cornstarch
- ¾ cup - all-purpose flour
- 1 - egg
- 1 ½ cups - breadcrumbs
- oil
Instructions
- Peel and cut the potatoes into small chunks. Boil for 4–5 minutes, just until slightly tender, not fully cooked. Drain and let cool for a few minutes.
- Mash the potatoes until smooth. Add salt, pepper, garlic, turmeric, curry, paprika, cumin, MSG, and the egg. Mix until everything is well combined.
- With lightly oiled hands, form the mixture into 7 cm (about 3 inch) long sticks. Place on a tray lined with parchment paper. Freeze for at least 2–3 hours, or overnight for best results.
- Dredge each frozen croquette in flour, then dip into the egg mixture and finally coat with breadcrumbs. For extra crunch, you can double coat them with egg and breadcrumbs.
- Heat oil to 175–180 °C (medium-high). Fry the croquettes in small batches for about 3–4 minutes, until golden brown and crispy. Drain on paper towels before serving.
