Crispy Prosciutto & Burrata Crostini

Crispy Prosciutto

1
Preheat the oven to 400°F (204°C). Line a sheet pan with parchment paper and set aside.
2
Working one at a time, fold each slice of prosciutto into a small pile. Space the piles on the prepared sheet pan about 1/2-inch apart. Bake for 10-12 minutes, until the prosciutto is darkened and mostly crisp.
3
Remove the pan from the oven and let the prosciutto cool completely. It will crisp up more as it cools. Break the prosciutto piles into smaller, bite-size pieces.

Burrata Crostini

1
Divide the burrata between the crostini. Make sure to get both the mozzarella shell and the straciatella (the creamy curds inside the cheese) on each piece!
2
Place a few pieces of the crispy prosciutto on each crostini. Drizzle the crostini with hot honey. Sprinkle freshly-cracked black pepper on top for garnish. Enjoy!

Tips & Tricks (5)

  • Prosciutto Crisping Technique 🥓
Bake prosciutto on a parchment-lined sheet at 400°F for 8-10 minutes until shatteringly crisp, then break into shards just before serving to maintain maximum crunch and prevent sogginess from moisture.
  • Burrata Temperature Matters 🧊
Remove burrata from the refrigerator just 5-10 minutes before assembling to achieve the perfect creamy texture that spreads luxuriously without being too cold and stiff.
  • Hot Honey Infusion 🍯
Make your hot honey at least 30 minutes ahead by gently warming honey with chili flakes, allowing the heat to fully infuse, then let it cool slightly so it drizzles smoothly without scorching the delicate burrata.
  • Crostini Base Stability 🍞
Toast crostini until deeply golden and completely crisp, then lightly brush with olive oil or quality butter immediately after toasting to create a moisture barrier that prevents sogginess from the burrata.
  • Black Pepper Finishing Flourish ⚫
Freshly crack coarse black pepper directly over the assembled crostini just before serving to maximize its aromatic punch and prevent it from absorbing moisture or getting lost among the other components.
