Instructions
1
Add your ground beef to a skillet on the stove. Sauté until brown. Once done, drain, and set the meat aside.
2
Add in your onions to the beef and cook until they soften. Once the onions are done, add your jalapeños and let cook for another few minutes. Add meat and veggie mixture to the crock pot.
3
Add in the garlic, chili powder and cumin. Then, mix in your Rotel and salt and pepper. Stir all of the ingredients together.
4
Pour in the evaporated milk, butter and cornstarch. Turn your crock pot to high, whisk ingredients together well and allow the mixture to bubble.
5
Add in all of your cheese and mix. Turn your crock pot down to low or warm and put your lid back on to let the cheese melt.
6
Remove the lid, transfer to your favorite serving bowl, and enjoy!

Tips & Tricks (5)
- Brown Ground Beef Separately 🍖Cook the ground beef in a skillet before adding to the crock pot to develop deep flavor through browning, then drain excess fat to prevent a greasy dip.
- Cornstarch Prevents Separation 🥄Whisk cornstarch with a small amount of evaporated milk before adding to create a slurry, which prevents the cheese from becoming grainy or separating during extended heating.
- Toast Your Spices First 🌶️Bloom the cumin and chili powder in the hot skillet with the beef for 30 seconds to amplify their aromatic compounds and deepen the overall flavor profile.
- Use Rotel Juice Wisely 💧Drain some liquid from the Rotel can and reserve it to adjust consistency at the end, allowing you to achieve the perfect dipping texture without over-thinning.
- Keep Low and Slow Setting 🔥Use the LOW setting on your crock pot and stir every 15-20 minutes to maintain creamy texture and prevent the cheese from scorching on the edges.
