Dairy-Free Baked Mac and Cheese

Dairy-Free Baked Mac and Cheese is creamy and delicious, topped with a crispy breadcrumb topping. It's just so cozy and comforting, what's not to like? Plus, it feeds a family or in my case, makes perfect leftovers for a week. This classic comfort food is vegan and can easily be altered for gluten-free diets.

Ingredients

  • 16 ounces - elbow pasta
  • 1 ½ cups - raw cashews
  • 1 ½ cups - dairy-free milk
  • ¼ cup - nutritional yeast
  • 1 clove - garlic
  • 2 teaspoons - dijon mustard
  • 1 tsp - salt
  • 1 tsp - chili powder
  • 1 tsp - onion powder
  • ½ tsp - turmeric
  • 1 cup - Panko breadcrumbs
  • 1 tbsp - olive oil

Instructions

  1. Preheat oven to 350 degrees F, drain the soaking cashews, and bring a large pot of water to a boil. Cook pasta according to package.
  2. As the pasta cooks, combine vegan cheese sauce ingredients together in a blender or food processor. Blend until silky smooth. If the mixture is too thick, add additional dairy-free milk one tablespoon at a time. Taste and adjust seasoning, if needed.
  3. Once the pasta is cooked to al dente, drain and add back to pot. Stir in vegan cheese sauce until combined. Transfer to prepared baking dish and top with breadcrumb topping.
  4. Bake for 20-25 minutes, remove from oven, let cool for about 10 minutes, then serve warm.
