Instructions
1
|
Place the chocolate and coconut oil in a bowl and melt in the microwave in 20 second increments, stirring in between.
2
|
Flatten the dates gently with your fingers and then place them on a piece of parchment paper so that they’re all lined up in a rough rectangle.
3
|
Place another piece of parchment paper on top and flatten the dates together so that you end up with a solid sheet of dates with very few gaps (some holes are totally fine).
4
|
Remove the top parchment paper and layer on the toppings. Spread the peanut butter out, followed by the peanuts. Drizzle the melted chocolate over the top and use a spoon or spatula to cover the surface of the dates with the chocolate. Sprinkle with sea salt.
5
|
Place in the freezer for 20 minutes or until the chocolate is hardened. Cut into bite sized pieces and ENJOY!
6
|
Store leftovers in an air tight container in the freezer for up to 3 months.
Notes

|
I like using drippy peanut butter for this because it spreads easier

Tips & Tricks (5)
- Temper Your Chocolate Properly 🍫Melt chocolate chips slowly over a double boiler or in 30-second microwave bursts, stirring between intervals, to prevent seizing and achieve a glossy, snappy finish on your bark.
- Toast Your Peanuts First 🥜Lightly toast raw or roasted peanuts in a dry skillet for 2-3 minutes before adding to the bark to intensify their nutty flavor and add a delightful crunch.
- Strategic Sea Salt Placement 🧂Sprinkle flaky sea salt immediately after spreading the chocolate layer while it's still warm, allowing it to adhere perfectly and provide an elegant contrast to the sweet dates and peanut butter.
- Pit and Soften Your Dates 📅Remove pits carefully and soak dates in warm water for 5 minutes if they're dry, then pat completely dry before arranging to ensure they stay in place and don't introduce unwanted moisture to your bark.
- Quick-Chill for Clean Breaks ❄️Freeze your finished bark for at least 2 hours, then let it sit at room temperature for 30 seconds before breaking into pieces—this ensures clean, attractive shards rather than messy crumbles.
