Ingredients
- 15 - medjool dates
- 3 tablespoons - peanut butter*
- 1 handful - peanuts
- ½ cup - chocolate chips
- 1 tsp - coconut oil
- flaky sea salt
Instructions
- Place the chocolate and coconut oil in a bowl and melt in the microwave in 20 second increments, stirring in between.
- Flatten the dates gently with your fingers and then place them on a piece of parchment paper so that they’re all lined up in a rough rectangle.
- Place another piece of parchment paper on top and flatten the dates together so that you end up with a solid sheet of dates with very few gaps (some holes are totally fine).
- Remove the top parchment paper and layer on the toppings. Spread the peanut butter out, followed by the peanuts. Drizzle the melted chocolate over the top and use a spoon or spatula to cover the surface of the dates with the chocolate. Sprinkle with sea salt.
- Place in the freezer for 20 minutes or until the chocolate is hardened. Cut into bite sized pieces and ENJOY!
- Store leftovers in an air tight container in the freezer for up to 3 months.
- I like using drippy peanut butter for this because it spreads easier
