Instructions
1
|
Preheat the oven to 400℉. Line muffin tin(s) with muffin liners or spray with non-stick spray.
2
|
Mix together the all-bran and buttermilk in a large bowl and let soak for 10 minutes while you prepare the other ingredients.
3
|
In another large bowl, mix the melted butter, brown sugar, molasses, and eggs. Add the soaked milk/bran mixture and mix until combined.
4
|
Whisk together the flour, baking powder, and baking soda separately before adding to the wet ingredients with the chopped dates and mixing until just combined. Spoon batter into the prepared muffin tins, filling them ¾ full with batter, 24 in total.
5
|
Bake in a 400℉ preheated oven for 5 minutes and then reduce the temperature to 350℉ and bake for an additional 10-12 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to finish cooling. Enjoy!

Tips & Tricks (5)
- Cereal Soak Strategy 🥣Let the all-bran cereal soak in buttermilk for 10-15 minutes before mixing into the batter to soften the cereal and enhance moisture absorption.
- Date Preparation Perfection 🍇Chop dates finely and dust them lightly with flour before folding into the batter to prevent them from sinking and distribute evenly throughout the muffins.
- Molasses Magic 🍯Warm the molasses slightly before adding to the recipe to help it incorporate more smoothly and prevent clumping in the batter.
- Muffin Tin Moisture Hack 💧If not using paper liners, fill empty muffin cups with a little water to help create more even baking and prevent burning.
- Resting Room Temperature Trick 🌡️Allow ingredients like eggs, butter, and buttermilk to come to room temperature before mixing to ensure a more uniform and smoother batter texture.
