Instructions
1
Preheat the oven to 400℉. Line muffin tin(s) with muffin liners or spray with non-stick spray.
2
Mix together the all-bran and buttermilk in a large bowl and let soak for 10 minutes while you prepare the other ingredients.
3
In another large bowl, mix the melted butter, brown sugar, molasses, and eggs. Add the soaked milk/bran mixture and mix until combined.
4
Whisk together the flour, baking powder, and baking soda separately before adding to the wet ingredients with the chopped dates and mixing until just combined. Spoon batter into the prepared muffin tins, filling them ¾ full with batter, 24 in total.
5
Bake in a 400℉ preheated oven for 5 minutes and then reduce the temperature to 350℉ and bake for an additional 10-12 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to finish cooling. Enjoy!

Tips & Tricks (5)
- Soak Dates for Optimal Texture 🌟Soak chopped dates in hot water for 10 minutes before adding to the batter to plump them up and distribute moisture evenly throughout the muffins for superior texture.
- Room Temperature Ingredients are Essential 🌡️Bring eggs, buttermilk, and butter to room temperature before mixing to ensure proper emulsification and create a tender, evenly-textured crumb.
- Bloom the Bran Cereal 🥣Mix the all-bran cereal with buttermilk 5 minutes before combining with other ingredients to allow it to absorb moisture and develop deeper flavor while preventing dry muffins.
- Don't Overmix the Batter 🥄Fold dry ingredients into wet ingredients just until combined—overmixing develops gluten and creates tough, dense muffins instead of the desired light, tender crumb.
- Fill Muffin Cups Strategically 🧁Fill muffin cups two-thirds full and distribute date pieces evenly across the batter to ensure consistent flavor distribution and prevent some muffins from being date-heavy while others lack sweetness.
