Devils On Horseback (Bacon-Wrapped Dates)
Instructions
1
Preheat the oven to 375°F.
2
Line a baking sheet with aluminum foil. Place a wire rack on top of baking sheet.
3
Make sure pitted dates each have a lengthwise slice down the center, or make a lengthwise cut with a sharp knife, taking care to not cut all the way through. Cut the cheese into 16 cubes, a scant 3/4-inch each. Cut each strip of bacon in half crosswise.
4
Place a piece of cheese in the center of each date, and pinch the sides to close the date. Wrap half a bacon strip around each date, with the seam falling on the opposite side from the slit.
5
Arrange the dates seam side down on the wire rack.
6
Bake the dates on the middle rack of oven until bacon is browned and crispy, 22-27 minutes.
7
Check to see that dates are done. Remove from oven or add time as needed.
8
Allow the dates to cool on the sheet for 5 minutes. Arrange the dates on a plate and stick a toothpick through the top of each. Serve immediately.

Made these as appetizers when we were having people over for cocktails - they were a huge hit! Made with cream cheese.

Tips & Tricks (5)
- Choose Medjool Dates Wisely 📅Select large, plump Medjool dates and pit them carefully from the side to create a pocket for cheese without splitting the fruit, ensuring they hold filling securely during cooking.
- Pre-Cook Bacon Slightly 🥓Partially cook bacon until just pliable but not crispy before wrapping—this ensures the bacon renders fully and crisps evenly while the date heats through without burning.
- Strategic Cheese Selection 🧀Use sharp cheddar, blue cheese, or goat cheese with high melting points to prevent leaking; stuff the dates generously just before wrapping to maximize the flavor contrast with sweet dates.
- Secure Wrapping Technique 🔐Wrap bacon tightly around each date and tuck the end underneath or use a toothpick to keep it in place, preventing unraveling during cooking and ensuring a polished presentation.
- Bake for Consistent Results 🔥Arrange on a lined baking sheet and bake at 400°F for 12-15 minutes rather than pan-frying, which allows for even browning and easier batch cooking for crowds without constant monitoring.
