Instructions

1
|
Preheat the oven to 375°F.
2
|
Line a baking sheet with aluminum foil. Place a wire rack on top of baking sheet.
3
|
Make sure pitted dates each have a lengthwise slice down the center, or make a lengthwise cut with a sharp knife, taking care to not cut all the way through. Cut the cheese into 16 cubes, a scant 3/4-inch each. Cut each strip of bacon in half crosswise.
4
|
Place a piece of cheese in the center of each date, and pinch the sides to close the date. Wrap half a bacon strip around each date, with the seam falling on the opposite side from the slit.
5
|
Arrange the dates seam side down on the wire rack.
6
|
Bake the dates on the middle rack of oven until bacon is browned and crispy, 22-27 minutes.
7
|
Check to see that dates are done. Remove from oven or add time as needed.
8
|
Allow the dates to cool on the sheet for 5 minutes. Arrange the dates on a plate and stick a toothpick through the top of each. Serve immediately.

Tips & Tricks (5)

  • Bacon Selection Secrets 🥓
Choose thin-cut bacon to ensure it crisps perfectly and wraps smoothly around the dates without overwhelming them.
  • Cheese Stuffing Pro Tip 🧀
Use soft, creamy cheeses like goat cheese or blue cheese for maximum flavor, and stuff sparingly to prevent leaking during cooking.
  • Toothpick Technique 🦷
Secure bacon with a toothpick inserted diagonally through the date and bacon to prevent unraveling during baking or broiling.
  • Elevated Baking Method 🔥
Use a wire rack on your baking sheet to allow excess bacon fat to drip away, ensuring crispier and less greasy appetizers.
  • Make-Ahead Magic ⏰
Prepare and assemble Devils on Horseback up to 24 hours in advance, refrigerating until ready to bake for maximum convenience.
