Ingredients
- 1 ½ cups - all purpose flour
- 1 tsp - baking soda
- 1 pinch - salt
- ¾ cup - pumpkin puree
- ½ cup - applesauce
- ⅓ cup - natural peanut butter
- 1 - egg
- 3 tablespoons - milk
- 1 cup - plain yogurt
- ½ cup - peanut butter*
Instructions
- Preheat the oven to 350 degrees F and spray 2 6 inch cake pans with cooking oil. I also like to line them with parchment paper for easy removal.
- Start by whisking together the dry ingredients in a medium bowl: flour, baking soda, and salt.
- In a large bowl, whisk together the wet ingredients: pumpkin puree, apple sauce, peanut butter, egg, and milk. Once fully combined, fold in the dry ingredients.
- Divide the batter evenly between the 2 cake pans and bake for 20-25 minutes or until the cakes are set and a toothpick inserted in the middle comes out clean. Let the cakes cool completely before icing.
- Make the icing by whisking together the yogurt and peanut butter.
- Ice the cake and decorate as desired! Optional for decoration: mini dog bones
- For the frosting, you could replace the peanut butter with several other things as desired such as pumpkin, sweet potato, pureed fruit etc. Sometimes using different fruits is fun because it gives the frosting a different color!
