Ingredients
- nonstick cooking spray
- 1 lb - lean ground beef
- ½ - onion
- 1 tsp - salt
- ¼ tsp - black pepper
- ⅔ cup - plain breadcrumbs
- ½ cup - milk
- ⅓ cup - ketchup
- ¼ cup - ketchup
- fresh parsley
Instructions
- Preheat the oven to 375°F. Spray an 8x4-inch loaf pan with nonstick cooking spray.
- Mix together the ground beef, diced onion, salt, pepper, breadcrumbs, milk, and ketchup in a large bowl until thoroughly combined. Transfer mixture to the prepared loaf pan.
- Bake the meatloaf on middle rack of oven for 40 minutes.
- Open oven and spoon the ketchup in an even layer over top of meatloaf. Continue baking until center of loaf reaches 160°F, 15-20 minutes.
- Check to see that meatloaf is done. Remove from oven or add time as needed.
- Allow meatloaf to rest for 10-15 minutes before serving. Scatter parsley on top if you like.
