Preheat the oven to 375°F. Spray an 8x4-inch loaf pan with nonstick cooking spray.

Mix together the ground beef, diced onion, salt, pepper, breadcrumbs, milk, and ketchup in a large bowl until thoroughly combined. Transfer mixture to the prepared loaf pan.

Bake the meatloaf on middle rack of oven for 40 minutes.

Open oven and spoon the ketchup in an even layer over top of meatloaf. Continue baking until center of loaf reaches 160°F, 15-20 minutes.

Check to see that meatloaf is done. Remove from oven or add time as needed.

Allow meatloaf to rest for 10-15 minutes before serving. Scatter parsley on top if you like.
