Instructions
1
Preheat the oven to 350℉. Line a 12-count muffin tin with parchment paper muffin liners.
2
Whisk together the melted butter and brown sugar, eggs, vanilla, buttermilk, and applesauce in a large mixing bowl.
3
In another bowl, whisk the flour, baking powder, baking soda, and spices. Fold in the chopped apples. Add to the wet ingredients and stir just until no streaks of flour remain.
4
Fill each muffin liner to the top with batter and sprinkle a little bit of raw sugar on top of each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool in the muffin tin for 10 minutes before transferring to a wire rack to finish cooling. Enjoy!

Tips & Tricks (5)
- Dice Apples Just Before Mixing 🍎Cut apples into small, uniform pieces immediately before folding into the batter to prevent browning and ensure even distribution throughout each muffin.
- Bloom Your Spices in Butter 🌟Melt the butter and whisk in your cinnamon, cloves, and allspice for 30 seconds before adding to the wet ingredients—this releases essential oils and deepens the spice flavor dramatically.
- Use Room Temperature Buttermilk 🥛Allow buttermilk to reach room temperature before mixing to ensure proper chemical reaction with baking soda, resulting in maximum rise and fluffier muffins.
- Don't Overmix the Batter 🎯Fold ingredients together just until combined—overworking develops gluten and creates dense, tough muffins instead of the light, tender crumb you're after.
- Fill Muffin Cups Strategically 🧁Layer batter, apple pieces, then more batter in each cup so apples are suspended in the middle rather than sinking to the bottom during baking.
