Marinate

Remove any tendons and visible fat from the chicken fillets, then place the fillets in a zip-top bag.

Squeeze the juice from one lemon. Crush the garlic using a garlic press (or finely grate it), then mix both with the olive oil, spices, and a little salt.

Carefully pour the marinade over the chicken. Seal the zip-top bag, pressing out as much air as possible so that the chicken is completely coated with the marinade. Refrigerate for 30 minutes up to 8 hours.

Bake the Chicken

Preheat the oven to 220°C (425°F) with top and bottom heat. Lightly grease a baking dish with oil or butter. Remove the chicken fillets from the bag and place them in the baking dish, discarding the remaining marinade from the zip-top bag.

Slice the second lemon thinly and place the slices on top of the chicken. Bake the chicken in the oven for 18–22 minutes, until it reaches an internal temperature of 75°C (165°F) or the meat is completely white when cut at the thickest part.
