Prepare the chicken:
1
Preheat the grill to medium heat. Place the chicken breast in a zip top bag and pound to even thickness. Remove from the bag and brush both sides with olive oil, then sprinkle evenly with taco seasoning.
2
Grill the chicken for 7-8 minutes per side or until the internal temperature reaches 160 degrees. Cooking time will vary depending on the thickness of your chicken. Remove from heat and allow to rest covered loosely with foil for 5-10 minutes. Slice or chop when the chicken has cooled enough to handle it.
Assemble the burrito bowls:
1
Place the desired amount of cauliflower rice between 2 bowls. Top with chicken, chopped romaine, black beans, guacamole, salsa and cheese if using. Serve with extra chopped cilantro and lime wedges as desired, and enjoy!

Tips & Tricks (5)
- Toast Your Taco Seasoning 🌶️Bloom the taco seasoning in the pan with oil for 30 seconds before adding chicken to intensify flavors and prevent a raw, powdery taste in your burrito bowls.
- Zest Before Juicing Limes 🍋Always zest your limes before cutting and juicing them—once cut, the zest becomes difficult to collect and you'll capture more aromatic oils for superior cilantro-lime rice.
- Thaw Cauliflower Rice Properly 🧊Squeeze out excess moisture from thawed cauliflower rice using a clean kitchen towel or cheesecloth before sautéing to prevent a soggy, watery base in your bowl.
- Layer Components for Meal Prep Success 📦Store wet ingredients (guacamole, pico de gallo) separately from dry components and assemble bowls just before eating to maintain crispy lettuce and prevent sogginess throughout the week.
- Pound Chicken for Even Cooking ⏱️Gently pound boneless chicken breasts to uniform thickness before seasoning to ensure they cook evenly in about 6-8 minutes and stay juicy rather than drying out.
