Preheat the oven to 200°C (390°F) using conventional oven settings (top and bottom heat). Wash the leeks, halve them lengthwise, and cut them into half-moons. Halve the zucchini lengthwise and slice them.

Place the vegetables on a baking sheet or in a large casserole dish and toss with the olive oil. Place the feta in the center and season with a little pepper and chili flakes. Bake at 200°C (390°F) for about 25 to 30 minutes, or until the feta is nice and soft and the vegetables have developed a roasted aroma.

After about 10 minutes, bring a pot of water to a boil and cook the pasta according to the package directions until al dente. Reserve about 80 milliliters of the pasta water before draining.

Remove the casserole dish from the oven. Mash the feta with a fork and mix it with the vegetables and 60 to 80 milliliters of pasta water until a creamy, cheesy sauce forms. Add the cooked pasta and stir everything well, season with salt and pepper if needed, and then serve.
