Tips & Tricks (5)

  • Bloom Gelatin Properly 💧
Sprinkle unflavored gelatin over cold water and let it sit for 5 minutes before adding hot liquid to ensure smooth, lump-free texture without grainy results.
  • Toast Almonds for Depth 🌰
Lightly toast whole almonds before grinding them into powder to intensify their natural flavor and create a richer, more complex almond extract taste.
  • Chill in Stages ❄️
Refrigerate the mixture for 2-3 hours until partially set before folding in fruit, preventing fruits from sinking to the bottom and ensuring even distribution.
  • Balance Sweet and Floral 🌸
Use almond extract sparingly (usually ¼-½ teaspoon) as it's potent; start with less and adjust to avoid an overpowering, artificial taste that masks delicate flavors.
  • Fresh Mint as Garnish ✨
Reserve fresh mint leaves for serving rather than mixing into the jelly, adding them just before eating to maintain vibrant color, aroma, and prevent flavor fading during storage.
