Instructions

1
|
Preheat the oven to 400°F.
2
|
Spray a 9x13-inch baking dish with nonstick cooking spray.
3
|
Dice the potatoes into 3/4-inch pieces and place in the baking dish. Finely mince the scallion and set aside.
4
|
Drizzle the olive oil over potatoes and season with the garlic powder, salt, and black pepper. Stir with a rubber spatula to coat potatoes in oil.
5
|
Roast the potatoes on middle rack of oven until tender but slightly underdone and just starting to brown, about 15 minutes.
6
|
Place the cooked chicken in a large mixing bowl. Season with the salt and black pepper, and add the garlic powder, paprika, minced scallion, and sour cream.
7
|
Remove potatoes from oven and transfer to the mixing bowl. Stir mixture with a rubber spatula until chicken and potatoes are thoroughly coated in sour cream.
8
|
Transfer the chicken and potato mixture to the baking dish and smooth into an even layer. Sprinkle the cheese over top.
9
|
Bake the casserole on middle rack of oven until cheese is melted and lightly golden brown, 12-15 minutes.
10
|
Check to see that casserole is done. Remove from oven or add time as needed.
11
|
Allow casserole to rest for 5 minutes before serving.

Tips & Tricks (5)

  • Potato Perfection 🥔
Slice Yukon Gold potatoes uniformly and soak them in cold water for 15 minutes to remove excess starch, ensuring a crispier and more even-textured casserole.
  • Cheese Melting Magic 🧀
Grate your own cheddar cheese instead of using pre-shredded varieties, as fresh cheese melts more smoothly and provides a richer flavor profile.
  • Leftover Chicken Hack 🍗
For maximum moisture, shred or dice chicken into consistent, bite-sized pieces to ensure even distribution and prevent dry spots in the casserole.
  • Layering Technique 🥘
Create alternating layers of potatoes and chicken, ensuring each layer is seasoned with a light sprinkle of garlic powder and black pepper for depth of flavor.
  • Creamy Texture Secret 💦
Mix sour cream with a splash of extra virgin olive oil before incorporating to create a smoother, more luxurious sauce that coats ingredients more evenly.
