In a medium bowl, mix 3 tablespoons of tahini, 2 tablespoons of fresh lemon juice, 1 tablespoon maple syrup or honey, ¼ teaspoon salt, ¼ teaspoon black pepper, and ⅛ teaspoon cumin.

Add 4 tablespoons of ice water and stir until smooth. If the sauce is too thick, add an extra tablespoon of water.
