Instructions

1
|
Preheat your oven to 400℉.
2
|
Melt butter in skillet on medium high.
3
|
Add in your onions. Mix and cook for about 5 minutes to soften the onions. Once they become translucent, add in your flour.
4
|
Mix in your All Purpose Seasoning, thyme, salt and pepper. Continue to mix until everything is incorporated with your flour. It should look thick.
5
|
Alternate pouring in a small amount of your half-and-half, and chicken broth. Continue to do this until your broth and half-and-half are gone.
6
|
Add in your turkey, and mix together until fully incorporated.
7
|
Place one pie crust on the bottom of your pie pan. Pour in your turkey pot pie mixture. With the back of a spoon smooth out the pot pie mixture so that it is even in the pie pan.
8
|
Beat your egg in a small separate bowl. With a brush, brush your egg mixture over the remaining crust to create a seal. Place the other crust on top and pinch together the sides of your pot pie.
9
|
Using a sharp knife cut lines in the top of your pie crust to vent. Brush more egg on top of the crust on the side as well as the center of the cross.
10
|
Place your pie in the oven for 30 to 35 minutes, or until the crust is lightly brown.
11
|
Allow your pie to cool for about 15 minutes before cutting into it.

Tips & Tricks (5)

  • Create a Golden Roux Base 🥛
Cook butter and flour together for 2-3 minutes before adding broth to eliminate raw flour taste and create a silky, lump-free filling sauce that coats the turkey and vegetables perfectly.
  • Shred Turkey Into Bite-Sized Pieces 🔪
Cut cooked turkey into uniform, smaller chunks rather than large pieces so they cook evenly in the filling and distribute flavor throughout each spoonful of the finished pie.
  • Sauté Aromatics First for Depth 🧅
Bloom your diced onions and thyme in butter for 2-3 minutes before adding flour to develop deep, complex flavors that elevate the entire pot pie from ordinary to restaurant-quality.
  • Chill Filling Before Adding Crust ❄️
Let the turkey and vegetable filling cool for 15-20 minutes before topping with pie crust; this prevents the bottom crust from becoming soggy and ensures even, golden-brown baking.
  • Egg Wash for a Professional Finish ✨
Brush the pie crust with a beaten egg mixed with a splash of water just before baking to achieve a gorgeous, burnished golden-brown top that looks bakery-made.
