  • 1  - mini watermelon
  • ½ pt - cherry tomatoes
  • ¼  - red onion
  • ½ bunches - radishes
  • 1 handful - mint leaves
  • ¼ cup - olive oil
  • 2 tablespoons - red wine vinegar
  •   - Salt and pepper

  1. Cut watermelon into approximately 1-inch cubes and add to a bowl.
  2. Slice cherry tomatoes in half and add to the watermelon.
  3. Thinly slice red onion and radishes, and toss with the watermelon and tomato.
  4. In a small bowl, whisk red wine vinegar and olive oil. Season with salt and pepper. Pour dressing into the salad bowl, gently toss and serve with ribbons of mint sprinkled on top.
