Instructions
1

Cook pasta according to package directions.
2

Add the olive oil and garlic to a cold skillet. Then, place the skillet over medium-low heat and cook for 2 minutes, or just until the garlic is fragrant. Slowly add the white wine to the pan and whisk to combine – it may pop a bit at first!

|
With the pan still over medium-low heat, add one tablespoon of butter and whisk until the butter has been fully incorporated. Repeat adding one tablespoon of butter and whisking until all of the butter has melted smoothly.
4
|
Add the parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2 minutes, or until the sauce has thickened to your desired consistency. Toss with pasta, serve immediately and enjoy.

Storage Instructions – Store any leftovers in an airtight container or jar, in the refrigerator for up to about a week. If serving with pasta, no need to reheat, simply stir it into warm pasta. As needed, rewarm, covered, in the microwave or on the stovetop.

Tips & Tricks (5)
- Choose Quality White Wine 🍷Use a dry white wine you'd actually drink—wines like Sauvignon Blanc or Pinot Grigio add complexity and prevent the sauce from tasting acidic or harsh after reduction.
- Emulsify with Cold Butter 🧈Cut cold butter into small cubes and whisk it in off-heat at the very end; this creates a silky, luxurious sauce that clings beautifully to pasta rather than separating.
- Toast Your Garlic Properly 🧄Cook minced garlic in olive oil for only 30-45 seconds until fragrant—longer cooking makes it bitter and overpowering, destroying the delicate balance of the sauce.
- Reserve Pasta Water First 💧Before draining, save 1 cup of starchy pasta water to thin the sauce and help it coat the noodles perfectly while finishing—this is the secret to professional-looking results.
- Finish with Freshly Grated Cheese 🧀Grate Parmigiano-Reggiano directly over the plated pasta rather than mixing it into the sauce; this preserves its nutty flavor and creates an elegant presentation.
