Instructions
1
Cook pasta according to package directions.
2
Add the olive oil and garlic to a cold skillet. Then, place the skillet over medium-low heat and cook for 2 minutes, or just until the garlic is fragrant. Slowly add the white wine to the pan and whisk to combine – it may pop a bit at first!
3
With the pan still over medium-low heat, add one tablespoon of butter and whisk until the butter has been fully incorporated. Repeat adding one tablespoon of butter and whisking until all of the butter has melted smoothly.
4
Add the parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2 minutes, or until the sauce has thickened to your desired consistency. Toss with pasta, serve immediately and enjoy.
Notes
1
Storage Instructions – Store any leftovers in an airtight container or jar, in the refrigerator for up to about a week. If serving with pasta, no need to reheat, simply stir it into warm pasta. As needed, rewarm, covered, in the microwave or on the stovetop.

Tips & Tricks (5)
- Choose Quality White Wine 🍷Use a dry white wine you'd actually drink, such as Sauvignon Blanc or Pinot Grigio, as the wine's flavor becomes concentrated during reduction and directly impacts the sauce's taste.
- Emulsify with Cold Butter 🧈Whisk in cold butter cubes at the end of cooking over low heat to create a silky, luxurious sauce that clings beautifully to pasta strands.
- Reserve Pasta Water Strategically 💧Save a cup of starchy pasta cooking water to adjust the sauce consistency and help it coat the noodles evenly without becoming too thick or thin.
- Toast Garlic Gently ⏱️Cook minced garlic in olive oil over medium heat for just 30-45 seconds until fragrant but not browned, as burnt garlic will create a bitter, unpleasant flavor.
- Finish with Fresh Parmesan 🧀Add grated Parmesan cheese in the final moments off heat and toss immediately with pasta to prevent clumping and preserve its delicate, creamy texture.
