This Whole30 Taco Soup recipe is the easiest and most flavorful stovetop soup! This soup has all the bright and bold flavors of a taco but in soup form. Ingredients

  • 2 tablespoons - olive oil
  • ⅓ cup - onion
  • ½ - red pepper
  • ½ - green pepper
  • 2 tablespoons - garlic
  • 1 lb - ground beef
  • 1 tsp - paprika
  • ½ tsp - ground pepper
  • 1 tsp - cumin
  • 14 ounces - canned diced tomatoes
  • 3 cups - chicken broth
  • ½ cup - coconut cream
  • 1 tsp - lime juice
  • jalapeños
  • cilantro

Instructions

  1. To make this Whole30 Taco Soup, heat olive oil in a Dutch oven or large skillet over medium heat.
  2. Add in onion, red pepper and green pepper and cook for 5 minutes.
  3. Add minced garlic and ground beef to skillet. Use a spatula to break up the meat.
  4. Once meat has browned, discard any excess grease and add in remaining ingredients except jalapeños and cilantro.
  5. Next, simmer on low heat for 15 minutes.
  6. Finally, remove from heat and serve. Garnish with jalapeños and cilantro if desired.
