
Easy Whole30 Taco Soup
This Whole30 Taco Soup recipe is the easiest and most flavorful stovetop soup! This soup has all the bright and bold flavors of a taco but in soup form. Ingredients
- 2 tablespoons - olive oil
- ⅓ cup - onion
- ½ - red pepper
- ½ - green pepper
- 2 tablespoons - garlic
- 1 lb - ground beef
- 1 tsp - paprika
- ½ tsp - ground pepper
- 1 tsp - cumin
- 14 ounces - canned diced tomatoes
- 3 cups - chicken broth
- ½ cup - coconut cream
- 1 tsp - lime juice
- jalapeños
- cilantro
Instructions
- To make this Whole30 Taco Soup, heat olive oil in a Dutch oven or large skillet over medium heat.
- Add in onion, red pepper and green pepper and cook for 5 minutes.
- Add minced garlic and ground beef to skillet. Use a spatula to break up the meat.
- Once meat has browned, discard any excess grease and add in remaining ingredients except jalapeños and cilantro.
- Next, simmer on low heat for 15 minutes.
- Finally, remove from heat and serve. Garnish with jalapeños and cilantro if desired.
