Tips & Tricks (5)
- Render Sausage Fat First 🍖Brown the ground sausage over medium-high heat without stirring for 2-3 minutes to develop a flavorful crust, then break it apart for even cooking and maximum texture contrast.
- Butter-Scrambled Eggs for Creaminess 🧈Cook eggs in butter instead of oil and stir gently and frequently over medium-low heat for silky, creamy curds that won't become rubbery or overcooked.
- Warm Tortillas Properly 🌯Char corn tortillas directly over a gas flame or in a dry skillet for 15-20 seconds per side to enhance their nutty flavor and improve pliability for easy folding.
- Toast Your Seasoning Blend 🌶️Bloom your seasoning blend in the rendered sausage fat for 30 seconds before adding eggs to unlock deeper flavor compounds and distribute spices evenly throughout the dish.
- Layer Toppings Strategically 🎯Add fresh cilantro and cherry tomatoes last, placing them on top rather than mixed in, to preserve their vibrant color, fresh crunch, and bright acidity that contrasts beautifully with warm egg and sausage.
