Ingredients
- ½ tsp - baking soda
- ¼ tsp - fine sea salt
- 1 - egg
- ½ cup - light brown sugar
- ¾ cup - all natural peanut butter
- ½ cup - mini chocolate chips
Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper and set aside.
- Place the baking soda, salt, and egg in a large mixing bowl and whisk together until lightly frothy. Add the brown sugar and whisk until smooth. Add the peanut butter 1/4 cup at a time, and mix with a spoon until a well combined and smooth dough forms. Fold in the chocolate chips.
- Scoop 12 dough balls, using about a tablespoon of dough for each, onto the prepared baking sheet. Lightly push the top of the balls down to flatten them slightly.
- Bake the cookies on middle rack of oven until the tops are crinkled and the bottoms are golden brown, about 9 minutes.
- Check to see that cookies are done. Remove from oven or add time as needed.
- Allow the cookies to cool completely on the baking sheet before serving.
