From the Cook
1/2
Flourless Peanut Butter Chocolate Chip Cookies
Instructions
1
Preheat the oven to 350°F.
2
Line a baking sheet with parchment paper and set aside.
3
Place the baking soda, salt, and egg in a large mixing bowl and whisk together until lightly frothy. Add the brown sugar and whisk until smooth. Add the peanut butter 1/4 cup at a time, and mix with a spoon until a well combined and smooth dough forms. Fold in the chocolate chips.
4
Scoop 12 dough balls, using about a tablespoon of dough for each, onto the prepared baking sheet. Lightly push the top of the balls down to flatten them slightly.
5
Bake the cookies on middle rack of oven until the tops are crinkled and the bottoms are golden brown, about 9 minutes.
6
Check to see that cookies are done. Remove from oven or add time as needed.
7
Allow the cookies to cool completely on the baking sheet before serving.

Tips & Tricks (5)
- Choose Natural Peanut Butter Wisely 🥜Use all-natural peanut butter without added oils or sugars, and stir the separated oil back in before measuring to ensure proper moisture balance and prevent dry cookies.
- Chill Dough for Better Texture 🧊Refrigerate your dough for at least 30 minutes before baking to prevent spreading and achieve the signature soft, chewy center with slightly crispy edges.
- Don't Overbake for Maximum Chewiness 🕐Remove cookies from the oven when edges are set but the center still looks slightly underbaked—they will continue cooking on the hot baking sheet for the perfect chewy texture.
- Use Fine Sea Salt for Better Distribution 🧂Fine sea salt dissolves and distributes more evenly throughout the batter than coarse salt, enhancing the peanut butter flavor and balancing sweetness perfectly.
- Room Temperature Eggs for Proper Binding 🥚Allow your egg to reach room temperature before mixing—it emulsifies better with the peanut butter, creating a more cohesive dough and better structural integrity without flour.
