Preheat the oven to 350°F.

Line a baking sheet with parchment paper and set aside.

Place the baking soda, salt, and egg in a large mixing bowl and whisk together until lightly frothy. Add the brown sugar and whisk until smooth. Add the peanut butter 1/4 cup at a time, and mix with a spoon until a well combined and smooth dough forms. Fold in the chocolate chips.

Scoop 12 dough balls, using about a tablespoon of dough for each, onto the prepared baking sheet. Lightly push the top of the balls down to flatten them slightly.

Bake the cookies on middle rack of oven until the tops are crinkled and the bottoms are golden brown, about 9 minutes.

Check to see that cookies are done. Remove from oven or add time as needed.

Allow the cookies to cool completely on the baking sheet before serving.
