Fluffy Waffles with Protein Powder

Process half of the oats (about 3/4 cup) in a blender until they form a fine flour.

In a large bowl, mix all the dry ingredients (oats, oat flour, baking powder, protein powder, and salt). Add the eggs, applesauce, milk, and sweetener, and stir everything together using a hand mixer or a whisk. Let the batter sit for 10 minutes to thicken, then add the sparkling water and mix well again.

Preheat your waffle iron and lightly spray it with non-stick spray or brush it with a few drops of neutral oil. Pour enough batter into the center, close the waffle iron, and cook the waffles until they are lightly golden brown (cooking time may vary depending on your waffle iron). Repeat this process until all the batter is used.
