Tips & Tricks (5)
- Soak Bread Strategically 🍞Dip bread cubes briefly (1-2 seconds per side) in the egg mixture to avoid sogginess while ensuring even coating—the condensed milk adds richness without requiring oversaturation.
- Pre-Mix Cinnamon Sugar 🤎Combine cinnamon and sugar in a shallow bowl before cooking so you can coat the warm bites immediately after frying, allowing the sugar to caramelize and stick perfectly.
- Butter Temperature Control 🧈Use clarified butter or a mix of butter and oil at 350°F to achieve the golden, crispy exterior while preventing burnt edges—this prevents the milk solids in butter from burning too quickly.
- Egg Mixture Balance ⚖️Whisk condensed milk with regular milk and eggs in a 1:1 ratio to create a custardy coating that's rich but not heavy, ensuring the interior stays creamy while the outside crisps up.
- Double-Dredge Technique ✨Let coated bread bites rest 2-3 minutes before frying so the egg mixture sets slightly, then quickly re-dip in the egg mixture for a thicker, more luxurious golden crust with better texture contrast.
