Tips & Tricks (5)
- Brioche or Challah is Essential 🍞Use thick-cut brioche or challah bread instead of regular bread—their high butter and egg content absorbs the custard mixture perfectly while maintaining that signature soft interior and golden exterior.
- Balance Your Custard Ratio 🥚Use a 2:1 ratio of milk to eggs with condensed milk for sweetness; this creates a rich, custardy coating that clings perfectly to bread without making it soggy or too heavy.
- Quick Soak, Don't Soak 💧Dip bread pieces for just 1-2 seconds per side in the egg mixture—prolonged soaking causes oversaturation and prevents the crispy exterior from forming during frying.
- Infuse Your Cinnamon-Sugar 🤎Toast your cinnamon-sugar mixture in a dry pan for 30 seconds before coating to bloom the spices' aromatics and intensify the warm flavor that makes each bite memorable.
- Maintain Consistent Oil Temperature 🌡️Keep your butter or oil at exactly 350°F (test with a bread cube—it should brown in 60 seconds) to ensure even golden-brown exteriors without burning or greasy interiors.
