Ingredients
- 1 head - frisée lettuce
- 1 - blood orange
- 1 - orange
- 1 - ruby red grapefruit
- 1 small bulb - fennel
- 1 - medium avocado
- ½ cup - chopped pistachios
Instructions
- Prep the citrus. Place the citrus on a cutting board and cut off the top and bottom of each. Stand upright and remove the peel from the sides by cutting from top to the bottom, removing as much of the white pith as possible. Turn the peeled citrus on its side and slice into rounds. Halve the rounds if they're large.
- Place the frisée on a large platter. Arrange the citrus and fennel over the top of the frisée, then drizzle generously with the vinaigrette. Top with the avocado and pistachios, then drizzle with additional vinaigrette and serve immediately.
