Tips & Tricks (5)
- Freeze Bananas Properly Before Dipping 🍌Slice bananas into 1-inch chunks and freeze on a parchment-lined baking sheet for at least 4 hours (or overnight) before chocolate coating to ensure they stay frozen and don't become mushy.
- Melt Chocolate with Shortening for Perfect Consistency 🍫Mix chocolate chips with shortening in a 10:1 ratio and melt together in a double boiler to create a thin, smooth coating that sets quickly without becoming thick or clumpy.
- Work Quickly Between Dips ⏱️Keep chocolate at 90-95°F and dip frozen banana pieces for only 2-3 seconds per batch, then immediately place back on the parchment to prevent the banana from thawing and the coating from becoming too thick.
- Toast Peanuts for Enhanced Flavor 🥜Lightly toast your peanuts in a dry skillet for 3-4 minutes before chopping and sprinkling on wet chocolate to intensify their nutty flavor and add superior crunch.
- Apply Toppings While Chocolate is Still Wet ✨Sprinkle nuts, sprinkles, or other toppings immediately after coating (within 10 seconds) while the chocolate is still tacky to ensure they adhere properly and don't fall off when frozen.
