It’s time to make the fruitiest, most fun rice krispie treats you’ve ever had! These Fruity Rice Krispies Treats aren’t your basic after-school-snack. They’re gooey, slightly crispy, soft, and chewy like the classic version, but with a fruity twist from freeze dried berries and Fruity Pebbles cereal. Keep them as they are, or add some creepy candy eyeballs to turn these into monster bites for Halloween!

Ingredients

  • 2 ⅓ ounces - freeze dried blueberries or can use mixed berry
  • 2 ⅓ ounces - freeze dried strawberries
  • 6 tablespoons - salted butter
  • 16 ounces - mini marshmallows
  • 4 cups - crisped rice cereal
  • 1 cup - Fruity Pebbles cereal
  • 1 tsp - vanilla extract
  • ¼ tsp - salt
  • butter

Instructions

  1. Grease an 8 x 8 inch cake pan with butter and line it with parchment paper.
  2. Add freeze dried berries to a food processor and blend until they become a coarse powder.
  3. Melt butter in a large pot or Dutch oven on medium-low heat, about 1 to 2 minutes.
  4. Add marshmallows, reduce heat to low, and cook until smooth (about 3 to 4 minutes) stirring occasionally with a silicone spatula or spoon. Be patient, you don’t want the marshmallows to caramelize or burn.
  5. Remove from heat and mix in the vanilla and the salt, then stir in the powdered freeze dried fruit until fully incorporated.
  6. Mix in the cereal, being sure to do so quickly before the marshmallows cool too much.
  7. Pour the marshmallow cereal mixture into the prepared pan and lightly press into an even layer. You can do this with your hands, a spoon, or a piece of parchment paper placed on top of the marshmallow treats.
  8. Cut these treats into large squares or bite-sized snacks and serve at room temperature.
