Tips & Tricks (5)
- Brown Your Garlic Properly 🧄Slice garlic thinly and cook it in butter over medium heat until golden and fragrant (about 2-3 minutes), but never let it brown completely or it will turn bitter and ruin the sauce.
- Reserve Pasta Water for Silky Sauce 💧Save 1 cup of starchy pasta cooking water before draining, then use 2-3 tablespoons to emulsify the butter and create a creamy, cohesive sauce that clings beautifully to every noodle.
- Cook Broccoli al Dente 🥦Add broccoli florets to the pasta water in the last 2-3 minutes of cooking so they stay crisp-tender rather than mushy, maintaining texture contrast against the soft pasta.
- Finish with Cold Butter for Richness 🧈After combining the pasta with the garlic butter, remove from heat and stir in small cubes of cold unsalted butter to create an emulsion that adds luxurious silkiness and prevents the sauce from breaking.
- Grate Parmesan Fresh and Final 🧀Use a microplane to grate whole Parmesan cheese directly over the plated pasta at the last second, as freshly grated cheese melts beautifully into the warm sauce rather than clumping like pre-grated varieties.
