Tips & Tricks (5)
- Pat Dry for Maximum Crispiness 💧Pat the cauliflower florets completely dry with paper towels before tossing with oil; moisture prevents browning and creates steam instead of the desired golden, crispy exterior.
- Slice Garlic Thin for Even Distribution 🧄Slice garlic into thin slivers rather than mincing to prevent burning and ensure pockets of tender, caramelized garlic throughout the roasted florets.
- Use Two-Stage Roasting for Perfection 🔥Roast at 425°F for 20 minutes, then add parmesan and broil for 2-3 minutes at the end to melt the cheese without over-charring the cauliflower.
- Don't Overcrowd the Pan 📏Arrange cauliflower in a single layer with cut-sides down on the baking sheet to maximize contact with heat, ensuring caramelization rather than steaming.
- Toast Parmesan Separately for Nutty Depth 🧀Mix finely grated parmesan with a pinch of salt and add only in the final 5 minutes to develop a toasted, nutty flavor while preventing the cheese from becoming bitter or burnt.
