Instructions

1
|
Preheat oven to 400F.
2
|
Line a baking sheet with parchment paper or a silicone baking sheet. Set aside.
3
|
Remove all leaves from the cauliflower and slice through the top in 2″ thick slices. The outer pieces will
4
|
fall into small florets, perfect for using in other recipes, while the central 3-4 slices will remain intact and will serve as your "cauliflower steaks."
5
|
Place the cauliflower slices on your prepared baking sheet.
6
|
In a small bowl, combine the Italian seasoning, salt, pepper, garlic and olive oil.
7
|
Use a pastry brush to brush the seasoning mixture over the cauliflower, turn over and coat completely.
8
|
Bake the cauliflower steaks for 20-25 minutes, flipping halfway through.
9
|
Once you are finished baking the cauliflower but they are still warm, sprinkle grated Parmesan cheese over each

Tips & Tricks (5)

  • Select the Perfect Cauliflower Head 🥦
Choose a large, dense cauliflower head at least 6-7 inches in diameter and cut steaks 1.5 inches thick to ensure they develop a crispy exterior while the interior stays tender during roasting.
  • Pre-dry Your Steaks Thoroughly 💧
Pat the cauliflower steaks completely dry with paper towels before oiling and seasoning—this removes surface moisture that prevents proper browning and charring in the oven.
  • Sear Before Roasting for Depth 🔥
Sear the cauliflower steaks in a hot cast-iron skillet with olive oil for 2-3 minutes per side before transferring to the oven, creating a golden-brown crust that adds smoky, nutty complexity.
  • Mince Fresh Garlic Instead of Using Powder 🧄
Use freshly minced garlic rather than garlic powder for superior flavor—toss it with olive oil and add it halfway through roasting to prevent burning while maximizing aromatic potency.
  • Apply Parmesan in Two Stages ✨
Sprinkle half the Parmesan before roasting and the remaining half in the final 2 minutes to create a crispy, golden crust without over-browning or losing delicate cheese flavor.
