Instructions
1
|
Preheat oven to 400F.
2
|
Line a baking sheet with parchment paper or a silicone baking sheet. Set aside.
3
|
Remove all leaves from the cauliflower and slice through the top in 2″ thick slices. The outer pieces will
4
|
fall into small florets, perfect for using in other recipes, while the central 3-4 slices will remain intact and will serve as your "cauliflower steaks."
5
|
Place the cauliflower slices on your prepared baking sheet.
6
|
In a small bowl, combine the Italian seasoning, salt, pepper, garlic and olive oil.
7
|
Use a pastry brush to brush the seasoning mixture over the cauliflower, turn over and coat completely.
8
|
Bake the cauliflower steaks for 20-25 minutes, flipping halfway through.
9
|
Once you are finished baking the cauliflower but they are still warm, sprinkle grated Parmesan cheese over each

Tips & Tricks (5)
- Choose the Right Cauliflower Cut 🔪Select a large, dense cauliflower head and cut steaks 1.5 inches thick—thin slices won't develop that prized crispy exterior, while thicker cuts ensure a tender interior.
- Pat Dry for Maximum Browning 🧻Pat cauliflower steaks completely dry with paper towels before roasting—moisture prevents proper caramelization and the golden, charred crust that makes these steaks irresistible.
- Two-Stage Cooking Method 🔥Sear steaks in a hot cast-iron skillet for 3-4 minutes per side first, then transfer to the oven at 425°F for 12-15 minutes—this technique creates a crispy exterior while keeping the interior buttery and tender.
- Infuse Garlic Oil for Deeper Flavor 🧄Combine minced garlic with olive oil and let it sit for 10 minutes before brushing onto steaks—this allows the garlic's natural oils to infuse and creates more nuanced, smoky flavors throughout cooking.
- Toast Parmesan at the End ✨Add grated Parmesan cheese in the final 2-3 minutes of roasting rather than at the start—this prevents burning and ensures it melts into a golden, nutty crust rather than turning dark and bitter.
